Abstract:
This research comparatively evaluates the quality of cow’s cheese from different producers by analyzing relevant parameters (composition, physico-chemical, microbiological, and organoleptic indices) and identifying potential non-conformities. Eight samples from local and foreign producers were evaluated using standardized methods. The results indicate significant differences between producers, particularly regarding microbiological compliance and acidity variations. The findings suggest a lack of uniform quality across producers and highlight the urgent need for stricter microbiological monitoring, improved production practices, and accurate product labeling. Ensuring compliance with established quality and safety standards is essential for consumer protection and maintaining public trust in dairy products. This study emphasizes the importance of continuous quality assessment to ensure the safety and consistency of fresh cow’s cheese in the Republic of Moldova. CZU: 339.13:637.3(478); JEL: L66
