dc.description.abstractCocoa powder is obtained by grinding the remaining cocoa cakes after the oil has been extracted. Cocoa is an important export product of many developing countries. The industrial importance of this product is indisputable because it is the main raw material for obtaining, first of all, confectionery products. The food industry of RM makes extensive use of this product. The purpose of the paper is to study the assortment of cocoa powder presented on the consumer market of RM and the degree of conformity of this product to the quality norms. The research object consists of 6 commercial brands of cocoa powder marketed on the consumer market of the Republic of Moldova. Research methodology: The samples under investigation were taken according to the requirements of the normative acts in force. Determination of the quality of cocoa powder was performed according to standardized organoleptic and physicochemical indices. Conclusion: The current assortment of cocoa powder presented on the consumer market of the Republic of Moldova consists of the following 6 names: Cocoa VAN (containing 10-12% cocoa butter); Cosmin Cacao (containing 11% cocoa butter); Dr. Oetker cocoa extra quality; Cocoa Dr. Oetker. of high quality (containing 22% cocoa butter); Cocoa powder CРIБРИЙ ЯРЛЫК (containing 11% cocoa butter); Cocoa powder Mango. After performing the organoleptic and laboratory analyzes of 6 samples of cocoa we find that only 2 products (Cacao VAN and CRIBRIY YARLĄK) of 6 correspond to all the indices of the requirements of the normative acts in force.
